This vibrant salad is perfect for a mid-week lunch. It is served with tuna that is mixed with capers and gherkins so you are well on your way to getting your quota of vegetables. Ingredients
For the salad:
Handful of red cabbage
Handful of green cabbage
Handful of spinach
1/2 of a red pepper
1/2 of a courgette
1/2 of a red onion
Handful of mushrooms
1 tbsp of pomegranate seeds
For the tuna:
1/2 tin of tuna
1 tbsp of Greek yoghurt
1 tsp of capers
1 gherkin, chopped
Method
Slice the vegetables with a mandolin. I dressed the salad with 1 tsp of dried oregano, 1 tbsp of apple cider vinegar, 1 tbsp of olive oil and salt and pepper.
Mix together the ingredients for the tuna and serve with the dressed salad.
