Bubble and squeak is another favourite of mine. It is perfect for using up leftover veg and potatoes from a roast dinner. For some added protein I like to top my bubble and squeak with a poached egg but you could also add fish or leftover meat from your roast.
Makes two patties
Prep time: 5 minutes
Cook time: 5 minutes
Ingredients
Carrots
Brussel sprouts
Broccoli
Swede
Peas
Potatoes
1 tsp of mixed herbs
1 tsp of olive oil
1 poached egg
Salt and pepper to taste
Method
Place the vegetables and potatoes in a bowl and mash them together. Add the mixed herbs.
Using your hands form the mixture into two even sized patties.
Heat the oil in a pan over a medium heat and cook the patties on each side for two and half minutes.
Serve the patties with a poached egg.
