A lovely, light lunch that tastes incredible. I love the combination of mackerel, fennel, orange and beetroot. This is one of my favourite lunches. It ticks all of the nutrient boxes - and did I say it tastes amazing?
Prep time: 10 minutes
1/4 bulb of fennel, slices using a mandolin
1/4 cup of beetroot
6 radishes, chopped
1/2 of an orange, peeled and quartered
A large handful of rocket leaves
1 tbsp of extra virgin olive oil
1 mackerel fillet
Salt and pepper to taste
Mix the fennel, beetroot, radish and rocket leaves together.
Gently squeeze the orange quarters over the salad vegetables and then add to the salad.
Pour over the olive oil and mix together.
Add the mackerel and season with salt and pepper to your taste.
