Mackerel salad bowl

A lovely, light lunch that tastes incredible. I love the combination of mackerel, fennel, orange and beetroot. This is one of my favourite lunches. It ticks all of the nutrient boxes - and did I say it tastes amazing?


Serves 1

Prep time: 10 minutes


Ingredients


1/4 bulb of fennel, slices using a mandolin

1/4 cup of beetroot

6 radishes, chopped

1/2 of an orange, peeled and quartered

A large handful of rocket leaves

1 tbsp of extra virgin olive oil

1 mackerel fillet

Salt and pepper to taste


Method

  • Mix the fennel, beetroot, radish and rocket leaves together.

  • Gently squeeze the orange quarters over the salad vegetables and then add to the salad.

  • Pour over the olive oil and mix together.

  • Add the mackerel and season with salt and pepper to your taste.

  • Enjoy the wonderful flavours!
