We got festive this week and made some Christmas gingerbread biscuits. This recipe is simple and quick and I decorated them with icing sugar. I use mixed spice instead of ginger as my kids find the taste of ginger too strong.
Cooking time 10 minutes
Makes approximately 14 biscuits
Ingredients:
100g salted butter
3 tbsp golden syrup
100g dark muscovado sugar
½ tsp bicarbonate of soda
1 tbsp of mixed spice
225g gluten-free plain flour
For decoration
Icing sugar
Method:
In the microwave, melt the butter, syrup and sugar. Do this 20 seconds at a time to ensure it doesn't burn. Once melted, set to one side.
In a large bowl, mix the bicarbonate of soda, mixed spice and flour.
Pour in the melted butter mixture and stir to combine and bring together to form a dough.
Preheat the oven to 170 and line a large baking try with greaseproof paper.
Roll out the dough, until it is approximately 1/2cm thick. But out shapes from the dough until it is all used up.
Place them in the oven and cook for 10 minutes.
Once the biscuits have cooled, dust them with the icing sugar and enjoy.
