Edamame beans are packed with protein so this breakfast is a great way to start the day. You can buy frozen edamame beans if you're struggling to find fresh ones.

Ingredients
100g of edamame beans
Juice of 1/2 a lemon
1 tbsp of grated parmesan cheese
1 slice of bread
1 poached egg
Chilli flakes
Salt and pepper to taste
Method
Cook the edamame beans in the microwave for 5 minutes with 1 tbsp of water.
When they have cooked, add the lemon juice and cheese and mash the beans.
In the meantime, toast the bread and poach the egg in a saucepan of boiling water.
Served the mashed beans on gluten free toast and top with the poached egg. Season with salt, pepper and the chilli flakes to your taste.
