Maple mustard chicken

Next week, over on Instagram, I will be talking about IBS solutions and how a low FODMAP diet is one piece of the puzzle in the approach to IBS. Here is a low FODMAP recipe for you to try.





Serves 4

Prep time: 10 minutes

Cook time: 30 minutes


Ingredients:

2 tbsp. Maple Syrup

2 tbsp. Dijon Mustard

1 tbsp Apple Cider Vinegar

2 tbsp. Tamari sauce (gluten free soy sauce)

4 Chicken Breast (Diced)

200g Green Beans (washed and trimmed)

1 large courgette (washed and cut into batons)

4 carrots (washed and cut into batons)

1 tbsp Extra Virgin Olive Oil

Sea Salt & Black Pepper (to taste)


Method:

  1. Pre-heat the oven to 200 degrees.

  2. Place the chicken breasts in an over proof dish. In a small bowl, combine the maple syrup, Dijon mustard, apple cider vinegar and tamari. Whisk well and pour it over the chicken breasts and mix to combine. Cook in the oven for 30 minutes.

  3. Meanwhile, toss your green beans, carrots and courgette in the extra virgin olive oil and season with sea salt and black pepper to taste. .

  4. Preheat a fry pan to a medium heat. Add the vegetables and cook for 15 minutes.

  5. Remove chicken from the oven and serve with the vegetables.
