Chicken 'fried rice'

Giving you all the flavours of traditional fried rice, but on a much healthier level. This version is packed with nutrients from the veg and protein from the chicken and quinoa, to help stabilise your blood sugar levels.


Serves 2

Prep time: 5 minutes

Cook time: 15 minutes


Ingredients


1 cup of cooked quinoa


Sauce:

2 tbsp soy sauce

1 tsp of maple syrup

1 Tbsp of peanut butter

1 tbsp lime juice

2 cloves of garlic, crushed

1 tsp of chilli flakes (to taste)

4 spring onions, finely chopped

1 tbsp of sesame oil

1/2 cup of chopped carrots

1 tbsp of soy sauce

4 spring onions, chopped

1 cup of broccoli, chopped

1 cup of peas

1 red pepper, sliced

150g of cooked chicken, diced

1/4 cup of cashews


Method

  1. If you haven't already, cook the quinoa according to the packet instructions. Next, combine all of the ingredients for the sauce and put to one side.

  2. Over a medium heat, heat the sesame oil in a pan. Add the vegetables, soy sauce and cook for 10 minutes.

  3. Add the quinoa, the chicken and the sauce and mix it with the vegetables. Cook for 5 minutes to warm everything through

  4. Serve in bowls and garnish with the cashew nuts.
