Coconut cod

Here is a quick but comforting meal. You can use any vegetables that you have in your fridge and you can swap the cod for another type of fish if you would prefer.



Serves 2

Total time: 25 minutes


Ingredients:

1 tbsp of sesame oil

1 red onion, sliced

2 cloves of garlic, crushed

1 bay leaf

1 tbsp of mixed herbs

1 tbsp of soy sauce

1 red pepper, sliced

1 courgette, sliced

1 can of coconut milk

2 cod fillets

1 tsp of rice vinegar (optional)

120g of spinach

1 packet of precooked rice


Method:


Heat the oil over a medium heat in a large pan, add the onion and garlic and cook for 5 minutes.


Add the vegetables, herbs and soy sauce. Cook for 5 minutes.


Add the coconut milk, cod and rice vinegar. Cook for 10 minutes.


Add the rice and spinach and cook for five minutes or until the rice has heated through and the spinach has wilted. Serve and enjoy.
