Spring is in the air!

Now the weather is a bit warmer I've found I've been craving fresh food and less winter warming meals. However, I'm not quite ready for full on salads just yet. If you're a bit unsure what to cook in this weather, try the recipe below.





Serves 2

Prep time: 5 minutes

Cook time: 25 minutes


Ingredients:

1 red pepper, sliced

1 yellow pepper, sliced

1 courgette, sliced

1 red onion, sliced

1 carrot, sliced

2 cloves of garlic, crushed

2 tablespoons of olive oil

125g of halloumi, sliced

Salt and pepper to taste


Method:


Preheat the oven to 200 degrees. Prep all of the ingredients and place the vegetables in an oven proof dish. Add 1 tablespoon of olive oil and mix well. Cook in the oven for 25 minutes.


While the vegetables a cooking in the oven, heat gridle pan or non-stick frying pan over a medium to high heat with the rest of the olive oil. Place the slices of halloumi in the pan and cook for 1-2 minutes on each side.


Serve with the vegetables and enjoy!
