Open tuna sandwich
This is a simple, quick and satisfying lunch to make and it tastes pretty good too.

Serves 1
Prep: 5 minutes
Ingredients:
10 green olives
1 tbsp of capers
8 cherry tomatoes
1 handful of parsley
1/2 a tin of tuna
1 tbsp of mayonnaise (you could also use Greek yoghurt)
1 slice of bread
Method
Finely chop the olive, capers, tomatoes and parsley. Add to a bowl in add in the tuna and combine the ingredients.
Add the mayonnaise or Greek yoghurt and stir to combine everything together.
Toast the bread, the tuna mixture and serve.
