Open tuna sandwich

This is a simple, quick and satisfying lunch to make and it tastes pretty good too.





Serves 1

Prep: 5 minutes


Ingredients:


  • 10 green olives

  • 1 tbsp of capers

  • 8 cherry tomatoes

  • 1 handful of parsley

  • 1/2 a tin of tuna

  • 1 tbsp of mayonnaise (you could also use Greek yoghurt)

  • 1 slice of bread


Method


  1. Finely chop the olive, capers, tomatoes and parsley. Add to a bowl in add in the tuna and combine the ingredients.

  2. Add the mayonnaise or Greek yoghurt and stir to combine everything together.

  3. Toast the bread, the tuna mixture and serve.
