Salmon stir fry

This stir fry is not only delicious but is really quick to make, less than 15 minutes.


Serves 2


Ingredients:

4 cloves of garlic, crushed

1 tbsp of ginger, grated

1 red chilli, sliced

1 pack of green beans, ends removed and halved

2 cooked salmon fillets

4 spring onions, sliced

Noodles, cooked according to packet instructions


For the sauce:

4 tbsp of soy sauce

1 tbsp of red wine vinegar

2 tsp of honey

1 tbsp of sesame oil


Method

  1. Preheat the oven to 180 degrees. Place the salmon in a baking dish and cook in the oven for 10 minutes.

  2. Mix together all the ingredients for the sauce in a bowl and set to one side.

  3. Sauté the garlic and ginger for 1 minute in olive oil. Add the green beans and chilli and cook for 2 minutes. Add the sauce and cook for another 2 minutes. Add spring onions and cook for another 2 minutes.

  4. Add the salmon and noodles and mix well. Serve and enjoy.
